From cattle farms to the winemaking market, Southbrook owners Marilyn and Bill Redelmeier dedicate their time and expertise to making VQA wines and fruit wines on two 75-acre parcels of land in Niagara-on-the-Lake, ON. Cave Spring Vineyard is the combination of Cave Spring Estate and Cave Spring Cellars, the creators of wines using the world’s noblest grape varieties – vitis vinifera. Under the guidance of grape grower Leonard Pennachetti and winemaker Angelo Pavan, Cave Spring continues the Old World traditions at its 15-km shelf of the Niagara Escarpment, where it is one of the oldest vinifera plantings.
